Recipe for Kadai Chicken

2 lbs chicken
2 tablespoons ghee
4 or 5 red chillis
1 teaspoon coriander powder
2 onions
2 green chillis
2 teaspoons garam masala
appox 2 or so tomatoes
3 peppers (sweet) roughly diced (big enough so they don't melt in the curry)
1/2 cup (or more if you like) fresh coriander
Salt and Pepper to taste


1. Skin the chicken and cut into pieces.
2. Chop tomatoes, green chillies, coriander leaves, onions, capsicum.
3. Heat ghee in wok, add red chillies then add onions and saute till light brown.
4. Add ginger garlic paste and stir for a minute then add coriander powder.
5. Add tomatoes and fry then add green chillies.
6. Simmer for 5-6 mins then add chicken and capsicum and cook until fat floats on
top and gravy is thick and chicken is cooked.
7. Sprinkle garam masala.
8. Add coriander leaves and stir.
9. Taste for salt and seasoning.
10. Remove onto a wok, garnish with chopped coriander leaves and slices of tomatoes.

PS: Don't add the garam masala at the last - only later in the cooking. You don't want to taste uncooked masala!
